Introduction

The method used in this study is a random design complete with two factors, namely the concentration of gambir leaf extract (G): (0%), (0.25%), (0.5%), (0.75%), and (1%), and storage time (L): (0 days), (2 days), (4 days), and (6 days). The parameters analyzed include the number of microorganisms, tofu acidity, the acidity of the immersion, water content, ash content, protein content, and sensory tests (color, aroma, taste, and texture).

Results

The results of this study showed that the number of gambier leaf extracts had a significant effect on the number of microorganisms, ash content, and sensory test results (color, aroma, and texture). Similarly, the storage time that has a significant effect on the number of microorganisms, the acidity of tofu, the acidity of the immersion water, water content, protein content, and sensory test results (color, aroma, taste, and texture). The interaction between gambier leaf extract and storage time also has a significant effect on the number of microorganisms and tofu colors. The best composition that gives the best effect on tofu quality is the use of 0.5% gambier leaf extract with a storage time of 4 days.
